Brazilian viticulture has registered significant advances, especially in the Southeast region, where the potential for the production of fine quality wines has been expanded through the implementation of the cycle inversion technique. This practice shifts the harvest to winter, in order to take advantage of the climatic conditions most conducive to the phenolic maturation of the grape, which favors the accumulation of sugars, acids and phenolic compounds. As a result, better physicochemical parameters are obtained and, consequently, superior fine wines. Despite the potential, the application of this method still requires specific adjustments and validations for each region. Viticulture in the state of São Paulo depends mainly on French cultivars grafted on rootstock Paulsen 1103. In this context, the hypothesis of this research is that the combination of cultivars of Vitis vinifera from Spanish, Italian and Portuguese origin, as well as the evaluation of the combination between rootsto
