  • Optimizing conditions for needle-array dielectric barrier discharge plasma reactor in the drying of white bread

    Innovative drying technologies are needed to improve energy efficiency and preserve food quality. This study explores the potential of a dielectric barrier discharge plasma reactor for low-energy drying of white bread. The drying process using a needle-array dielectric barrier discharge plasma reactor has been conducted. White bread samples of uniform weight were used as the drying material. The drying process was conducted under low-energy power with the power range between 1 and 12 Watts; the sample distance varied between 3 and 6 cm; and a similar time process of 30 minutes. The results show that the moisture content of bread was significantly reduced, with the best result of 3.26±0.22% from the operation condition combination of power 9 Watts and sample distance 4.5 cm. In addition, three other operational conditions performed relatively higher than the others. They are the combination of power and sample distance of 6 Watts – 4 cm, 8 Watts – 4.5 cm, and 7 Watts – 5 cm, with moisture content reduction of 2.98±0.35%, 3.08±0.44%, and 2.75±0.14%, respectively. These results indicate that the needle-array dielectric barrier discharge plasma reactor under low-energy power can potentially be utilized to dry foodstuffs or organic material. However, the impacts of plasma drying on nutritional content, sensory, and textural properties are still unclear. Thus, further work is needed to assess the nutritional stability and sensory attributes of plasma-dried bread.

    While carrageenan coatings offer promising preservation for fish, limitations like water absorption and insufficient antimicrobial strength necessitate more investigation on combining them with natural substances. This study aimed to extend the shelf life of tilapia fillets using an edible coating made from carrageenan and sodium chloride (NaCl). Response Surface Methodology (RSM) was employed to optimize the coating formulation, considering film properties such as thickness, swelling index, opacity, and water vapor transfer rate. A Central Composite Design (CCD) identified the optimal composition as 1.4 grams of carrageenan and 0.6 grams of NaCl, minimizing undesirable characteristics. The optimized coating was applied to fresh tilapia fillets and compared to uncoated controls during five days of refrigerated storage (4.5 oC). Quality parameters, including bacterial count, total volatile basic nitrogen (TVB-N), pH, weight loss, and color, were monitored. The carrageenan-NaCl coating significantly reduced bacterial growth, with values increasing from log 6.31 CFU/ml on day 0 to log 6.34 CFU/ml on day 5, compared to uncoated fillets exhibiting TNTC (too numerous to count) bacteria by the end of storage. Additionally, the coated fillets displayed a lower increase in TVB-N (22.50%) compared to uncoated samples (31.38%), maintaining a stable pH and experiencing less weight loss (27.54%) compared to uncoated controls (32.96%). The coating also effectively preserved color, indicating its potential to maintain sensory attributes. These findings suggest that the optimized carrageenan-NaCl edible coating offers a promising strategy for extending the shelf life and maintaining the quality of fresh tilapia fillets, potentially reducing losses within the seafood supply chain.

    This study focuses on optimizing carrageenan-cornstarch edible coatings to address the challenges of water resistance and improve the functional properties of biopolymer-based food packaging. Unlike previous studies, this research emphasizes the use of Response Surface Methodology (RSM) to systematically optimize the formulation, providing a novel approach to achieving multi-response optimization with minimal experimental effort. Thirteen formulations were prepared with varying concentrations of carrageenan (1-2 grams), cornstarch (0-2 grams), and glycerol (1% v/v) to minimize key parameters, including thickness, moisture content, swelling, solubility, spectrophotometric properties, and Water Vapor Transmission Rate (WVTR). The R² values for these properties were: 81.18% (thickness), 98.51% (moisture content), 63.88% (swelling), 96.69% (solubility), 74.04% (spectrophotometric properties), and 64.09% (WVTR). The optimal formulation (1.04 grams of carrageenan and 1.69 grams of cornstarch) produced an edible coating with desirable properties: 0.08 mm thickness, 32.18% moisture content, 11.48% swelling, 1.81% solubility, 4.90% spectrophotometric, and 0.04 g/(m2.24h) WVTR. This formulation achieved a desirability score of 0.6321, demonstrating its potential as a sustainable alternative for food packaging with enhanced performance.

    Fish is now one of the most popular and nutritious foods. In Indonesia, fish consumption has risen by 7.4% annually, from 38.14 to 54.5 kg per capita between 2014 and 2019. African catfish (Clarias gariepinus) is one of the most commonly consumed fish, often stored in household refrigerators. However, detailed studies on the temperature and quality changes of fish during refrigeration are limited. This study aims to explore the characterization of the temperature and quality changes of African catfish during storage in household refrigerators. In this experiment, the fish were stored in three compartments of the refrigerator: freezing (R1), chilling 1 (R2), and chilling 2 (R3), for a duration of three days. The temperature of both the fish and the refrigerator compartments was measured every 15 seconds. Additionally, electrical current was monitored to assess energy consumption. The quality of the fish, including total volatile basic nitrogen (TVB-N), moisture content, protein content, and mass (weight loss) was analyzed before and after the storage period. The refrigerator was also subjected to door-opening treatments to observe any impact. The study provides detailed insights into the temperature dynamics of African catfish, the room temperature inside the refrigerator, cooling times, fish quality changes (TVB-N, moisture, protein, mass), energy consumption, and the effect of refrigerator door openings.
  • Application of automated paddlewheel aerator in shrimp culture pond; effect on water quality, energy cost and biomass

    Aeration plays a pivotal role in an intensive shrimp pond regarding shrimp growth and energy costs. The purpose of this study was to find a way to reduce energy costs while maintaining shrimp performance. The study was carried out in about 0.3 hectares of outdoor ponds for 80 days with stocking density being set to 80 shrimp/m2 in two types of treatment an Automatic (AP) and a Manual paddlewheel (MP). Parameters observed were dissolved oxygen (DO) concentration, temperature of water and pH, energy cost, and shrimp biomass. Resulting study found that mean DO concentrations in both treatments were not significantly different, which were 4.99 ± 1.45 ppm and 4.94 ± 1.54 ppm for AP and MP respectively. Temperature and pH were also found to be in same range of 26.81-34.08 oC and 7.8-8.3. Differences in paddlewheels had no effect on final biomass; AP produced 2249.56 ± 300.67 kg, while MP resulted in 1547.43 ± 359.04 kg. However, the treatments reduced total energy costs significantly, from $657.84 ± 6.13 for MP to $409.76 ± 3.52 for AP. Using of an automated paddlewheel based on real-time DO concentration can contribute significantly to lowering production costs and energy consumption without interfering with shrimp performance.
  • Ultraviolet irradiation effect on characteristics of protease enzyme from African catfish ( Clarias sp.) intestines

    The goal of this study was to investigate the impact of UV-C irradiation on the activity of crude enzymes derived from African Catfish intestines as well the optimum conditions for subsequent autolysis processes. Three key variables were assessed: UV-C exposure time, pH and temperature. The experiments involved the homogenization of intestines in cold distilled water followed by subjecting the mixture into UV-C treatment for exposure times of 0, 10, 20 and 30 minutes. After centrifugation process, the collected supernatant was utilized as the crude enzyme. At various level of temperature (40, 50, 60°C) and pH (6, 7, 8) the activity of crude enzyme was assayed with casein as substrate. The findings revealed the increasing of EA as the UV-C exposure time decreased and pH increased, while the highest EA value was observed at temperature of 50°C. Consequently, the optimal conditions were identified as follows: 0 minutes of UV-C exposure time, pH of 8, and temperature of 50°C. Furthermore, UV-Vis absorption, FTIR, and fluorescence spectroscopy of the crude enzyme after UV-C irradiation induction was studied to investigate the its conformational changes. These additional analyses provided valuable insights into the structural alterations of the crude enzyme caused by the UV-C treatment.
  • Phase change material-assisted freezing of tuna: Impact on freezing process and thawing loss

    Abstract Due to slow freezing, freezing fresh fish in a chest freezer often leads to deterioration while products are thawed. Many approaches have been conducted to deal with it. One of them is the application of Phase Change Material (PCM) in refrigeration systems. This study aims to investigate the ability of PCM to accelerate the freezing of fish in the household freezers. The tuna used was stored in the freezer with PCM, which was put on a surface wall cabinet then compared with storage in the freezer without PCM. Besides, the door of the freezer was also opened frequently (three times a day, 1 hr each time) to find out the effect of fluctuating temperatures and freezing operations for 60 hr. The parameters observed include the evolution temperature of the air cabinet and fish, energy consumption of the freezer, and thawing loss. Results showed that PCM accelerated the cooling rate of air cabinets and fish but could not suppress the fluctuation temperature. The quality of the frozen tuna improved, which was indicated by a decreased thawing loss parameter from 3.10% to 1.76%. Overall, this finding revealed PCM has significant potential to improve the fish freezing process. Practical Applications The household chest freezer is widely used to freeze fish by small and medium‐sized enterprises (SMEs). The most important factors in freezer preferences are simple operations and low energy consumption. But, the freezer worked at slow freezing, which caused higher thawing losses of the product. Hence, the application of PCM to the household freezer potentially improves the freezing process of the fish. So, sellers and retailers of fish could maintain their products without replacing the freezer with an advanced one.
