I am a PhD student in veterinary medicine at the Universidade Federal de Viçosa (UFV) in Brazil. My research interests include food microbiology, food safety, artisanal dairy products, antimicrobial resistance, and one health approaches applied to food production systems. My academic background includes a degree in veterinary medicine, a specialization in sanitary surveillance and food quality, and a master’s degree in veterinary medicine.
During my master’s research, supported by CAPES, I investigated how production characteristics of Artisanal Minas Cheese (QMA – Queijo Minas Artesanal) impact the microbiological and physicochemical results obtained from official inspection analyses. This work helped clarify the relationship between traditional production practices, product identity, and food safety parameters in artisanal cheese production systems.

EDUCATION

My scientific research focused on food microbiology, food quality, artisanal dairy production systems and antimicrobial resistance in food matrices, particularly in relation to Artisanal Minas Cheese (QMA). My work has helped to shed light on the influence of traditional production practices on the microbiological quality, physicochemical characteristics and microbial ecology of artisanal cheeses. Recent studies explored associations among production systems, identity aspects, and microbiological indicators in QMA, using epidemiological and multivariate analytical approaches. My current doctoral research investigates resistome dynamics during cheese ripening, contributing to One Health discussions on antimicrobial resistance in traditional food production systems.
