  • Investigation of beetroot (Beta vulgaris L.) water-soluble fractions in altering yogurt properties

    • Water-soluble fraction of beetroot was investigated for yogurt development • Low amount of beetroot water fraction increased the yogurt acceptability • Potential of local-based underutilized ingredient for yogurt enrichment Different beetroot derivatives have been used in yogurt, improved the nutritional-related properties, and challenged the functionality as well as acceptability. However, fresh water-soluble-fraction (WFB) from beetroot in yogurt has never been reported. The study evaluated the functionality and acceptability of yogurt enriched with WFB at different concentrations (10, 20, and 30 g/L), which were evaluated at 5 °C for 0, 6, 12, and 18 days of storage. Compared to control, the addition of WFB significantly decreased the pH from 4.1 – 4.9 to 2.3 – 4.2 and increased total acid from 2.1 – 2.5 to 3.0 – 3.6, total lactic acid bacteria (LAB) from 6.6 – 6.9 to 6.8 – 7.1 log CFU/mL, vitamin C from 2.3 – 3.1 to 2.4 – 4.1 mg/100 g, DPPH radical scavenging activity from 23.5 – 50.0 % to 61 – 69 %, and hedonic acceptability. Total LAB rose from 6.6 log CFU/mL to reach the highest at 30 g/L addition which ranged between 6.8 – 7.1 log CFU/mL. 20 g/L of WFB generated a more stable vitamin C during the 18 days of storage period. During the 18 days of storage, the 20 and 30 g/L of WFB yogurt had a higher stability of antioxidants. In conclusion, 20 and 30 g/L of WFB can be expected to enhance the stability of nutritional-related properties of the yogurt with a higher acceptability. Low amount of WFB contributed to an attractive performance from consumer perspective.

    Identifying the oil of Louhan fish (Amphilophus labiatus), which are now considered a nuisance and a danger to the native fish of Lake Toba, as a source of omega 3 and omega 6 fatty acids is the aim of the study. From August to November 2023, the research was conducted at the Faculty of Agriculture Laboratory at Santo Thomas Catholic University. The physical and chemical properties of Louhan fish oil, as well as its fatty acid content, were examined using a gas chromatograph. The physical and chemical analysis of Louhan fish oil revealed the following results: turbidity point 36 oC, total solids 34 oBrix, free fatty acid content 3.35 mg KOH/g, peroxide number 7.3 meq/kg, iodine number 45 mg/100g, and saponification number 198 mg KOH/g. The results of the gas chromatography study showed that the levels of unsaturated fatty acids were higher than those of saturated fatty acids. Furthermore, linolenic acid, an omega 3 fatty acid, and linoleic acid, an omega 6 fatty acid, were found in the analysis's results. Louhan fish oil may include omega 3 and omega 6 fatty acids, which are beneficial to human health, based on its fatty acid composition.

  • Potential of Medan Barangan Banana (Musa acuminate L.) Extract as Antiphotooxidative in Linoleic Acid Systems

    The fat oxidation is a major cause of quality degradation in various processed food products. Oxidation can occur through reactions with diradical triplet oxygen or nonradical singlet oxygen, which may be formed from triplet oxygen in the presence of sensitizers and light. Erythrosine, a common food colorant, is a photosensitizer due to its conjugated double bonds. This study investigates the antioxidant and antiphotooxidant activities of the Medan Barangan banana fruit and its potential to enhance the oxidative stability of food products, particularly in the linoleic acid system. Key methods include extraction and activity testing of various banana extracts: hexanes (HE), hexanes acetone sequential (HASE), and hexanes acetone ethanol sequential (HAESE). Results show all extracts possess reducing power and DPPH radical scavenging activities, with HAESE demonstrating the highest efficacy. Additionally, HAESE exhibits significant singlet oxygen quenching, reducing linoleic acid peroxide formation in the presence of erythrosine. These findings suggest potential applications of Medan Barangan banana in food preservation, contributing to more sustainable agricultural practices by utilizing local agricultural commodities.
  • Utilization of jasmine flower extract as antimicrobial in tempeh sausage

    Bacterial contamination is a major problem for sausage products. Jasmine extracts that has antimicrobial compounds can extend the shelf life of tempeh sausage naturally. The purpose of this study was to tested the effectiveness of using jasmine extract as an antimicrobial agent in tempeh sausage during cold storage 4°C. This study began with preparing jasmine extracts by maceration method using waters, methanol, ethyl acetate and hexane as solvents. Bacteria used in the test were Escherichia coli, Staphylococcus aureus and Bacillus cereus. Diffusion disc assay was used with completely randomized design 2 factors and 4 replications. The results showed that the jasmine extracts with a concentration of 25%, 50%, 75% and 100% had an effect to inhibit of the growth of the bacteria. Jasmine extract with ethyl acetate solvent was the most effective to inhibit the growth of bacteria. Concentration of jasmine extracts that can inhibit the growth of bacteria Escherichia coli and Staphylococcus aureus was 0.1% and 0.25%. Tempe sausage with the addition of jasmine extracts was tested microbiologically with total plate count, The test results showed that the addition of low concentrations extracts of jasmine on tempeh sausage could decrease the total microbial at cold storage for 5 days.
  • Hayami method application in the evaluation process of farmers who produce wet and dry corn seeds

    Corn is one of the strategic and economic value commodities, and has the opportunity to be developed because of its position as the main source of carbohydrates and protein after rice, besides that corn acts as animal feed, industrial raw materials and households. The purpose of this study was to determine the factors that explain the reason farmers sell wet and dry corn seeds. The data analysis method used is the Hayami Method which includes added value, a comparison of the income of farmers who sell wet seeds by selling dry seeds. Factors that influence corn farmers that produce wet and dry corn seeds are the need for fast refunds, weather, labor wages, high selling prices and availability of storage. There is an added value of Rp136.55 / Kg obtained by dry corn seed farmers from processing wet corn seeds. The results of the Independent Sample Test analysis t Test the corn farmers who sell wet seeds with farmers who sell dry seeds that the value of Sig (0.014) <(0.025), meaning that there is a difference in income of wet seed farmers with dry seed farmers.
  • The effect of chicken and mycorrhizal manure toward cacao seedling growth on ultisol soil

    Cacao plants are one of the national leading commodities after oil palm and rubber. This study aims to measure the effect of chicken and mycorrhizal manure on cacao seedling growth on ultisol soil. The method used in this study was a randomized block design consisting of two treatment factors. The given of ultisol Soil + Chicken manure (P) consisting of 4 levels: P0 about 100% (control), P1 about 25% Chicken manure + 75% ultisol, P2 about 50% Chicken manure + 50% ultisol and P3 about 75% Chicken manure + 25% ultisol. Administration of Mycorrhizal Dosage: M0 about 0 g Mycorrhiza (control), M1 about 25 g Mycorrhiza, M2 about 50 g Mycorrhiza and M3 about 75 g Mycorrhiza. Based on the results of the study, it can be stated that chicken manure treatment up to 75% and increased plant growth, number of leaves, leaf area, wet weight of seed, root volume and dry weight of seedlings, but not to the diameter of cacao seed stems. The treatment of mycorrhizal doses of up to 75 g/plant and increased plant growth, number of leaves, leaf area, wet weight of seed, root volume and dry weight of seedlings, but not to the diameter of cacao seedling stems. The interaction of chicken manure and mycorrhizal doses had no significant effect on all parameters.
  • The influence of liquid type with grain size on the soil properties in hybrid corn growth

    Liming activity is an effort to raise the soil pH so that the reaction is not acidic. Most of the plants are less tolerant of acidic soil (pH <7). Because acidic soil causes solubility of Aluminum (Al), Manganese (Mn), and Iron (Fe). For example, when Al's solubility is high, Al does not only poison the plant but causes the essential element phosphorus (P) in the soil to be fixed (bound) by the Al so that it cannot be absorbed by the plant. This study aims to determine the effect of lime types with grain size on soil properties and growth and production of hybrid corn. This study uses nonfaktorial randomized block design (RBD) which consists of two treatment factors, namely the type of agricultural lime which is divided into 2 treatment levels, namely D1: Dolomite and D2: Calcite, each type is divided into 3 sizes namely: D1-1 is passes 60 mesh filter, D1-2 is passes 80 mesh filter, D2-1 is passes 60 mesh filter, D2-2 is passes 80 mesh filter. Thus, 4 treatments will be repeated 3 times, so that there will be 12 experimental units. Each experimental unit consists of 3 polybags, so that 36 polybags will be obtained. And in each experimental unit there were 2 sample plants. The results showed that lime treatment significantly affected plant height, wet weight of straw, ear length, ear diameter and ear weight per plant, but had no significant effect on the number of leaves, leaf area index, and flowering age.
  • The effect of activated charcoal dose and benzyl amino purine concentration on the growth of orchid plantlets in murashige and skoog media in vitro

    Indonesia has a high variety of orchids. In vitro propagation of orchids was strongly influenced by the composition of the medium used. This study aims to conduct the effect of activated charcoal and BAP concentration on the growth of orchid subcultures in Murashige and Skoog Media. The experimental design used was a Completely Randomized Design (CRD) with two factors. Benzyl Amino Purine concentration (0 ml / l, 0.25 ml / l, 0.5 ml / l, and 0.75 ml / l active dose of charcoal (0 (0 g / l, 1 g / l, and 1, 5 g / l). The results showed that BAP concentrations up to 0.75 ml / l at the age of 8 mst had a significant effect on root length, but did not significantly affect the number of leaves, root number, and plantlet height. The activated charcoal up to 1.5 g / l does not have a significant effect on the number of leaves and number of sprouts at the age of 2-7 mst, but at the age of 8 mst was significantly affect the number of roots, root length, and plantlet height.
