    ABSTRACT Peppers of the genus Capsicum are rich in antioxidants and considered to be an excellent source of compounds, which can bring benefits for human health, such as vitamin C and phenolic compounds. These compounds are influenced by the ripening stage of the fruits. Thus, the aim of this study was to determine the ideal harvest point for ‘Murupi’ pepper fruits, targeting the consumer market, based on physical, chemical, and functional attributes. These attributes were evaluated during postharvest, being the fruits packed in low density polyethylene plastic film (LDPE) and submitted to cold storage (25±1°C and 95±3% U.R.) for 20 days. The treatments consisted of three different fruit maturation stages at harvest time (fruit peel color: green, partially red and totally red). The authors analyzed the vitamin C, total and soluble fibers, ORAC (Oxygen Radical Absorbance Capacity), DPPH (2.2-diphenyl-1-picrylhydrazyl), total and reducing sugars, total phenolics, carotenoids, capsaicin and anthocyanins. The fruits harvested in immature stage (green) showed the highest values of vitamin C, total phenolics and, capsaicin contents, and also the highest averages of fruit antioxidant activity. The use of 0.10 mm-thick LDPE packages showed to be effective in delaying the maturation of pepper fruits in relation to sensory attributes, especially in terms of total fiber contents, being also observed, in this case, better maintenance of vitamin C and capsaicin contents, phenolic compounds and the highest antioxidant activity.

  • Postharvest quality of two sweet potato cultivars submitted to different harvest ages

    ABSTRACT The quality of sweet potato roots is influenced by factors which precede harvest. Thus, the aim of this study was to correctly determine the harvest point and study the postharvest quality of two sweet potato cultivars harvested at different ages. The experiment was carried out at Universidade Federal de Roraima. The plants were grown from April to August, during rainy season, 2020. The harvest was carried out at 80, 95, 110, 125 and 140 days after planting (DAP). The tuberous roots were cleaned and the physicochemical traits of the pulp and peel were evaluated. Soluble solids, titratable acidity and SS/AT ratio were observed in greater quantity in the cultivar BD-02. The luminosity and chroma of the peel of the sweet potato roots were more intense in the cultivar BD-01 and the opposite was observed when characterizing the pulp of this cultivar. At 110 DAP, we verified the highest levels of reducing sugars and chroma of the peel, as well as lower values for the chroma of the pulp and °H of the peel. Thus, according to the results presented above, especially in relation to carbohydrate metabolism, productivity and dry matter accumulation, the cultivar BD-02, harvested at 110 DAP, showed the best postharvest traits under the experimental conditions presented in this study.

    ABSTRACT This study evaluated the post-acidification, stability of anthocyanins and antioxidant activity in açai yogurts and fermented milks for 28 days of cold storage. For the determination of post-acidification and stability of the functional properties of açai yogurt (IA) and fermented milks (LFA), products stored at 4°C were evaluated on day 0 and every 7 days for pH, titratable acidity in lactic acid, instrumental color, anthocyanins and antioxidant activity by the DPPH free radical method. Acidification of both food matrixes was more evident between days 0 and 7 of evaluation. IA presented reduction in parameter L *, while chromaticity a * and b * of IA and LFA increased as the Açai pulp content increased; however, considering the evaluation period, it was found increase in L * and b * relating to anthocyanin degradation. Anthocyanins, as well as the antioxidant activity of IA and LFA, showed an increase in their values as the pulp content increased, but their concentrations reduced at the end of the storage period. IA and LFA can be considered excellent sources of antioxidants, being alternative to individuals not used to the consumption of fruits and vegetables.

    RESUMO Os frutos do açaizeiro (Euterpe oleracea Mart.) e da bacabeira ( MOenocarpus bacabaart), duas palmeiras tropicais nativas e socioeconomicamente importantes para os estados Amazônicos, são utilizados na produção de polpas processadas em sistemas agrofamiliares. Nesse sentido, o presente estudo objetivou a avaliação da qualidade físico-química e funcional de polpas de açaí e bacaba processadas artesanalmente. Os frutos foram coletados em propriedades rurais do município do Cantá/Roraima (bacaba) e Boa Vista/ Roraima (açaí). Para a constituição do experimento, as polpas processadas foram armazenadas em pequenas embalagens de politereftalato de etileno (PET) transparente e com tampa (mesmo material), com capacidade de 145 mL e refrigeradas a 3 ± 0,2°C e 45% de U.R., durante 5 dias. Foram analisados os seguintes parâmetros: pH, acidez titulável (AT), sólidos solúveis (SS), relação SS/AT, açúcares totais e redutores, pectinas totais e solúveis, teor de antocianinas e fenólicos totais. Ao final, para as polpas de açaí, levando-se em consideração os limites estabelecidos pelo Padrão de Identidade e Qualidade (PIQ), apenas o parâmetro AT apresentou-se fora da instrução normativa. Entretanto, a inexistência de padrões para bacaba inviabilizou tal comparação. Quanto ao teor das pectinas totais, pode-se concluir que ambas as polpas apresentam baixas concentrações desse componente, não sendo indicadas para produção de doces e geleias sem adição de agentes geleificantes. Os teores de compostos fenólicos e de antocianinas, em ambas as polpas, apesar de diminuir com o período de armazenamento refrigerado, apresentam altas concentrações quando em comparação a outros alimentos com apelo funcional.

  • Woolliness and leatheriness in late peach cultivars submitted to both delayed storage and to cold storage

    The study was performed to identify the effect of delayed storage on the control of woolliness and leatheriness during cold storage of the late peach cultivars grown in Brazil. The fruits were harvested at the mature-green stage. All of the cultivars were exposed to temperatures of 20 ± 0.5oC and 75 ± 3% of R.H. in a cold room for 0, 24, or 48 hours. Afterwards, the fruits were kept at 0 ± 0.5oC and 92 ± 3% of R.H. for 28 days. The yellow pulp peaches, regardless of the length of delayed storage, did not present any symptoms of woolliness or leatheriness. The white pulp peaches not submitted to delayed storage developed either one or more of the other physiological disorders. Due to their lower level of pulp firmness, the control fruits of 'Chimarrita' and 'Marli' peaches were classified as woolly fruits. The control fruits of 'Chiripa' peaches, with pulp firmness of more than 30 N, presented leatheriness. High pectinmethylesterase (PE) activity was verified in the woolly fruits. The delayed storage for 48 hours in all the cultivars provided advanced ripening. The delayed storage by 24 hours was effective in the control of physiological disorders in the white pulp cultivars.

  • Inhibition of pulp browning and quality maintenance of late peach cultivars

    The purpose of this study was to identify the effect of delayed storage on the maintenance of the quality and on the control of pulp browning during cold storage of late peach cultivars. The fruit was harvested at the mature-green stage. All cultivars were exposed to temperatures of 20 ± 0.5oC and 75 ± 3% of moisture in a cold room for 0.24, or 48 hours. Afterwards, the peaches were kept at 0 ± 0.5oC and 92 ± 3% of R.H. for 28 days. In the end, the yellow pulp cultivars, regardless of temperature and length of delayed storage, did not present signs of internal browning and were of adequate quality for commercialization. When they were not subjected to delayed storage, the white pulp peaches presented pulp browning after 14 days of cold storage plus two days out of the cold room. From the results observed in the analysis of soluble solids, titratable acidity and decay development, these peaches showed an increased level of ripening. In both cultivars, delayed storage for 48 hours resulted in increased ripening and decay. Delayed storage for 24 hours was effective in controlling pulp browning and in maintaining the quality of the white pulp peach cultivars.

    O controle do desenvolvimento vegetativo é fundamental na cultura da macieira, a fim de aumentar a eficiência produtiva e a qualidade dos frutos produzidos. O desenvolvimento dos ramos pode ser reduzido pelo uso de substâncias inibidoras da biossíntese de giberelinas, como o proexadione cálcio, sendo a resposta deste fitorregulador dependente do padrão sazonal do crescimento da parte aérea. O objetivo do trabalho foi avaliar o efeito de diferentes épocas de aplicação de proexadione cálcio no controle do desenvolvimento vegetativo de macieiras 'Imperial Gala', nas condições climáticas do Sul do Brasil. No ciclo de 2008/2009, foram avaliadas seis épocas de aplicação de 330 g ha-1 de proexadione cálcio (28; 58; 88; 118; 148 e 178 dias após a plena floração - DAPF) e sete épocas de aplicação em 2009/2010 (20; 50; 80; 110; 140, 170 e 200 DAPF), além do tratamento-testemunha. Aplicações de proexadione cálcio a 330 g ha-1, realizadas aos 20 a 28 dias após a plena floração reduzem o comprimento médio e a massa fresca média dos ramos podados em macieiras 'Imperial Gala'.

  • Atmospheric modification and ethylene's control in posthaverst, for 'Prata-Anã' bananas cultivated in the setentrional Brazilian amazon

    O presente trabalho teve por objetivo avaliar o efeito da atmosfera modificada (AM) pelo uso de embalagem plástica de polietileno de baixa densidade (PEBD), do vácuo e da adsorção de etileno, visando à manutenção da qualidade das bananas 'Prata-Anã' produzidas em Roraima. As análises foram realizadas em intervalos de 5 dias após a colheita, até 35 dias de armazenamento refrigerado (AR). Verificou-se que os frutos submetidos a embalagem de PEBD apresentaram as menores perdas de massa fresca quando comparados aos demais. Da mesma forma, os frutos embalados na presença do adsorvedor de etileno obtiveram a melhor manutenção na coloração da casca, atraso temporal, do pico climatérico, assim como o retardamento na degradação do amido, os menores incrementos de sólidos solúveis e acidez titulável, as menores concentrações de etileno nos interiores das embalagens e atraso temporal e a diminuição da atividade enzimática. Isso, possivelmente, proporcionou os maiores teores de pectina total e solúvel ao final do período experimental. A combinação do uso da embalagem de PEBD com o sachê de permanganato de potássio (KMnO4) resultou no retardamento do processo de maturação dos frutos de banana 'Prata-Anã', quando armazenada a 12 ºC. Pode-se atribuir esse efeito benéfico à presença do sachê na adsorção de etileno e, consequentemente, na ação do etileno no amadurecimento dos frutos, retardando a senescência das bananas 'Prata-Anã'.

  • Methods of climatization of 'Prata-Anã' bananas cultivated in the northern Brazilian Amazon

    O objetivo, neste trabalho, foi avaliar o uso da climatização para a uniformização de bananas 'Prata-Anã' produzidas em Boa Vista-RR. Após colhidos, os frutos foram selecionados no formato de buquês, sanitizados, climatizados por abafamento com lona plástica ou por imersão em solução de Ethrel®, embalados com filme de polietileno de baixa densidade e armazenados por quatro períodos de tempo (0; 10;20 e 30 dias) a 12 ± 1 ºC e 93 ± 2% de UR. Após cada período de armazenamento refrigerado (AR) os frutos foram submetidos ao armazenamento em condições ambiente (22 ± 1 ºC e 75 ± 3% UR), retirados das embalagens plásticas e sendo analisados após 1; 2; 3 e 4 dias. As seguintes análises foram realizadas: perda de massa fresca, coloração da casca, produção de etileno e CO2, atividade das enzimas pectinametilesterase e poligalacturonase, acidez titulável (AT), pectina total e solúvel, amido e sólidos solúveis (SS). Não houve diferenças significativas entre os métodos de climatização, porém verificou-se que, quanto maior o período de AR e de condicionamento, menor foi o período de conservação das bananas 'Prata-Anã'. Ficou evidenciado, também, que a climatização, independentemente do método utilizado, deve ser realizada em até 20 dias após a colheita, nas condições de AR aqui testadas. Nessas condições, foi possível manter a qualidade sensorial das bananas por até 3 dias após a retirada dos frutos do armazenamento refrigerado.

  • Characterization of the antioxidant capacity of natives fruits from the Brazilian Amazon region

    The objective of the present study was to characterize the chemistry and the antioxidant capacity in 8 species of native fruits from Amazonia. All the fruits were collected at full physiological and commercial maturity from properties located at: Boa Vista / RR, São Luiz do Anauá / RR, Manaus / AM, and Belém / PA. At the end of the experiment, the functional pattern for the camu-camu fruits showed that the total phenolic and ascorbic acid content and antioxidant assays were superior compared to the other samples. Despite the functional losses detected for the freeze-dried samples of the camu-camu fruit, all the other freeze-dried samples kept under -20ºC showed appropriate stability for long-term storage. In addition, it was also observed that fruit peel showed higher antioxidant activity than pulp or samples containing peel and pulp tissues in the same extract. When the ratio between the ORAC and total phenolic assays were observed, the uxi fruit demonstrated the highest antioxidant power compared to the other fruits studied, despite its relatively low levels of phenolic compound content and ORAC values. This means that there is a relevant contribution of these phenolic compounds to the antioxidant activity of uxi fruit.

  • Application of postharvest technologies for bananas 'Prata-Anã' produced and marketed in the Roraima - Brazil

    Neste trabalho objetivou-se manter a qualidade e aumentar o tempo de prateleira durante a pós-colheita de bananas 'Prata-Anã' e se avaliou a eficiência do armazenamento refrigerado (AR) e da atmosfera modificada (AM) pelo uso de embalagens plásticas de polietileno de baixa densidade (PEBD), do vácuo e da utilização de sachê adsorvedor de etileno. Os tratamentos foram: T1: Controle (sem embalagem, sistema de adsorção de etileno e sem vácuo); T2: Embalagem de polietileno de baixa densidade (PEBD); T3: PEBD + adsorvedor de etileno; T4: PEBD + vácuo e T5: PEBD + adsorvedor de etileno + vácuo. As análises foram realizadas em intervalos de 5 dias após a colheita, até 35 dias de AR. Verificou-se que os frutos submetidos à embalagem de PEBD apresentaram as menores áreas de lesão na casca, as menores concentrações de etileno, os menores incrementos de acidez titulável (AT) e comportamento normal/manutenção dos valores de pH o que, possivelmente, proporcionou os maiores teores de açúcares totais e redutores ao final do período experimental; concluiu-se,então, que a combinação do uso da embalagem de PEBD com os sachês adsorvedores de etileno resultou no retardamento do processo de maturação dos frutos de banana 'Prata-Anã' proporcionando, comercialmente, a extensão da vida útil dos frutos em até 30 dias após a colheita.
