    This study evaluated the potential of Ceylon cinnamon extract as a natural antioxidant in broadband anchovy fishburgers during frozen storage (−18 °C). Three treatments were compared: sodium erythorbate, spray-dried cinnamon extract, and microencapsulated cinnamon extract with maltodextrin. Characterisation included proximate chemical composition, cooking weight loss, scanning electron microscopy, antioxidant compounds, and sensory analysis. Stability was evaluated through lipid oxidation thiobarbituric acid reactive substances (TBARS), total volatile basic nitrogen, pH, instrumental colour, and microbiological analyses. Both cinnamon were highly effective in preventing lipid oxidation. TBARS values remained consistently low in cinnamon-treated samples. Colour stability has been improved, preventing the undesirable greenish hue observed in the control. High-Performance Liquid Chromatography-Diode Array Detector (HPLC-DAD) analysis qualitatively confirmed the presence of cinnamaldehyde in treated fishburger samples, below the quantification limit. Ceylon cinnamon extract is an effective natural antioxidant in fishburgers, offering a promising “clean label” alternative for the food industry.

    Fish and fish products are known as a good source of high quality protein (Bolat et al., 2019; Oliveira et al., 2020) and important micronutrients for health such as fatty acids (ω3), minerals, amino acids, and vitamins (Food and Agriculture Organization of the United Nations, 2018). However, due to the high proportion of polyunsaturated fatty acids, those products are susceptible to spoil by lipid oxidation, causing the loss of nutritional value (Mathew & Abraham, 2006) and their depreciation of quality and cost (Secci et al., 2016).

    O interesse pela cultura da pupunha começou a crescer após a década de 70, tendo em vista as qualidades agronômicas, industriais e comerciais. O Estado de São Paulo possui destaque como um dos maiores produtores de pupunha do país, sendo a maior concentração no Vale do Ribeira. Objetivou-se com este trabalho avaliar características de desenvolvimento vegetativo das plantas e produtividade de palmito em função do momento de corte das hastes em cultivo com diferentes densidades populacionais, para o segundo ano de corte. O delineamento experimental utilizado foi o de blocos casualizados em esquema fatorial 2x5 e quatro repetições, sendo os tratamentos com cinco classes de altura de corte do estipe (1,60 m, 1,90 m, 2,20 m, 2,50 m e 2,80 m) e duas densidades de plantas (5.000 e 10.000 plantas ha-1). O experimento foi conduzido na fazenda do Campus Experimental de Registro da UNESP. As análises foram realizadas em dois momentos, março e setembro de 2016. Hastes de 2,8 m colhidas no mês de março obtiveram maior diâmetro do caule, número de folhas e quantidade total de palmito produzido. Hastes com a mesma altura de corte, porém colhidas no mês de setembro proporcionaram maior produção de palmito picado, rodela, tolete e quantidade total de palmito pupunha.
  • Performance of tambacu hybrid (♂Piaractus mesopotamicus x ♀Colossoma macropomum) and its parental pacu (Piaractus mesopotamicus) evaluated in cages under different feeding programmes

    We evaluated the growth and body traits of pacu and tambacu hybrid reared in cages and fed through different feeding programmes. Six treatments in a factorial scheme, with two genetic groups (pacu and tambacu) and three feeding programmes, were tested in 12 cages. In each cage, 50 juveniles (pacu, 120 ± 31 g; tambacu, 119 ± 28 g) were stocked and fed according to three feeding programmes using three commercial diets containing 24%, 28% or 32% crude protein in different combinations during 167 days. Measurements were performed on ten animals sampled from each experimental unit at days 30, 60 and 167 of the experiment, and the weights were recorded. During the final sampling, in addition to weights, the measurements of standard length, head length, height and body width were recorded. Five of the ten animals sampled at 167 days were euthanised and processed to obtain the carcass, rib, fillet, gut and fat yields. The fillets from two of the five processed fish were used to determine the chemical composition. Data were submitted to analysis of variance and means were compared by the SNK test. The pacu group presented higher weight averages than the tambacu throughout the experiment, especially when the animals were fed by the programme with the lowest dietary protein levels. Body shape and yields were also more noteworthy for the pacu group; however, the pure animals also presented higher lipid values in the fillet, which may be a negative aspect of the final product consumed. In general, tambacu hybrid production in cages does not seem to be an interesting alternative to the farming of the pure parental species.

    The objective of this work was to evaluate the supplementation of diet of pacu and tambacu with acid fish silage during winter. The experimental design was a 2 × 2 factorial arrangement (two genetic groups and two diets), with three replicates. The genetic group factor was composed of pacu (Piaractus mesopotamicus) and tambacu (♀ Colossoma macropomum × ♂ Piaractus mesopotamicus). The two diets were based on plant ingredients; one of them was supplemented with acid fish silage (silage diet), and the other was a base diet without supplementation. Twelve net tanks, six from which with pacu, and six with tambacu, were used as experimental units, with ten fish in each tank. There was an interaction of the factors for final length, final weight, and daily weight gain. Pacu fed the silage diet showed a higher growth than pacu fed with the base diet; however, this effect was not observed for tambacu. A higher feed efficiency was observed for pacu than for tambacu, without a diet effect. The diet supplementation with acid fish silage improves the productive performance of pacu reared at cold suboptimal temperature, but it does not have this effect on tambacu.
  • QIM, CATA, and Word Association methods for quality assessment of flathead gray mullet (Mugil cephalus): Going beyond the trained panel

    This study aimed to verify how untrained assessors would perform the quality evaluation of the flathead gray mullet (Mugil cephalus) using Check‐All‐That‐Apply (CATA) (n = 44) and Word Association (WA) (n = 112) methods by comparing the results with those from trained assessors (n = 5–9), using the Quality Index Method (QIM). Descriptors from QIM were adapted and used as CATA descriptors for the evaluation of fish with 3, 8, 10, 15, and 17 days of storage in ice. Images of fish with 3, 6, 10, 15, and 19 days of ice storage were used as stimuli for WA. The quality indices obtained from QIM and CATA presented a high correlation with r = .94 (p = .018). Multiple Factor Analysis revealed a high similarity between CATA and QIM sample configurations. Appropriate descriptors were selected in CATA for fish stored for different periods. This resulted in a better discrimination of samples in comparison with WA. M. cephalus, with 15 days of storage in ice, was rated unacceptable for consumption by both trained and untrained assessors. These findings showed that even untrained assessors were able to evaluate fish freshness, and thus emphasize the importance of actions aimed at maintaining the quality of raw fish from capture to commercialization.Practical applicationsThe evaluation of fish quality by consumers has been considered tricky. Only more experienced fish consumers have confidence in their ability to judge the freshness of fish. However, our study showed that untrained individuals, confronted with the task of evaluating fish quality using both the CATA and the Word Association methods, performed very well. This allowed us to conclude that they were clearly able to evaluate freshness. Untrained individuals were neither stricter, nor more lenient than trained assessors in determining the shelf life of the flathead gray mullet. Our study joined many others that have concluded that CATA method—thanks to its easiness to perform—resulted in the discrimination of samples similar to that obtained with trained panels. These findings demonstrate that CATA and WA methods, designed to be applicable with untrained panels, were effective in the evaluation of fish freshness, thus providing a solution when trained assessors are not available. In addition, the importance of trading fish with high quality is clear, so that the consumers can receive value for their money and feel satisfied.
  • Acid silage of tuna viscera: Production, composition, quality and digestibility

    Resí­­duos de pescado processados na forma de silagem podem se constituir em uma alternativa ao uso de farinha de peixe (FM). Neste estudo caracterizou-se a composição e qualidade da silagem ácida produzida a partir de ví­­sceras de atum (TV) e determinou-se a digestibilidade dos nutrientes deste produto para jundiá Rhamdia quelen, utilizando-se o óxido de í­­trio como marcador inerte em delineamento completamente casualizado. Ao final de trinta dias, 61,74% da proteí­­na bruta da TV estava solubilizada. A silagem ácida de TV apresentou boa composição nutricional (alta proteí­­na e bom perfil de aminoácidos e de ácidos graxos essenciais) e qualidade microbiológica satisfatória. A digestibilidade da proteí­­na bruta foi similar (88,52%) para TV e FM, mas a da matéria seca foi maior (P<0,05) para a TV (92,20%). A silagem de atum apresentou-se como um ingrediente proteico de alta qualidade nutritiva e digestiva para juvenis de jundiá, R. quelen. Portanto, este novo ingrediente tem potencial como fonte alternativa de proteí­­na para rações de espécies aquí­­colas.
  • Phosphorus reduction by sifting fish waste meal

    Fish meal is widely included in animal feed because it contains ideal essential amino acids profile, it is rich in energy, essential fatty acids, vitamins and minerals and with >80% apparent protein digestibility in peneid shrimp. In human nutrition, studies are investigating the inclusion of fish meal in snacks, cakes, breads and cookies, as an enrichment in calcium, phosphorus, iron, protein and, especially, omega-3 fatty acids. Omega-3 fatty acids reduces heart diseases and have antithrombotic and anti-inflammatory properties (eicosapentaenoic acid), and are essential to the formation of brain tissue and retina in infants and are important during pregnancy and lactation (docosahexaenoic acid). Fish meal produced from fish waste is rich in minerals (phosphorus), which may cause eutrophication and impair water quality in aquaculture. The aim of this study was to reduce phosphorus content from commercial fish meal produced from waste by sifting (0.60 - 1.00 - 1.18 - 1.40 - 2.36 and 3.35mm mesh sizes). Fish meal samples were collected monthly for 24 months. Proximate composition of subsamples per mesh size was compared to the unsieved sample. Results indicate that sifting through a 0.60mm sieve total phosphorus and ash contents were reduced up to 32% and 36%, respectively, further to increase protein content up to 20%. Average composition of the subsamples was 47.04% ash, 5.56% of total phosphorus and 39.45% protein, suggesting that the residue of the fractionation may be marketed as a mineral and protein supplement.

    O objetivo deste trabalho foi avaliar o desempenho zootécnico de alevinos de jundiá, alimentados com silagem de rejeitos de pescado, em substituição ao farelo de soja e à levedura de cana. Durante 35 dias, 375 alevinos de jundiá com peso inicial de 1,73±0,17 g, distribuídos em delineamento inteiramente casualizado, foram avaliados em cinco tratamentos e quatro repetições. Os tratamentos consistiram de inclusão de silagem de pescado a 0, 12,5, 25, 37,5 e 50%. Todos os parâmetros zootécnicos avaliados, exceto o fator de condição, mostraram que a substituição do farelo de soja e da levedura pela silagem de rejeito de pescado melhora o desempenho produtivo de alevinos de jundiá.
